Just as the olive tree stoically withstands the passage of time, the forces of nature, and the challenges of life, so too did the quiet pillar of our family, Josip Zimić — Jole — who planted our first olive trees and gave them meaning.
Although he left his hometown of Trpanj as a young boy, he always found his way back: to the sea, the seagulls, fishing from his small wooden boat, and eventually, to the olive trees.
Those very trees became part of our family's journey. Together, we tended them, working, making mistakes, and learning along the way.
Every year, we hope that the olive oil we produce will serve as a tribute to Jole and his perseverance.
Because STOIK was never an idea we invented.
